Lirah is a family owned business based in Stanthorpe, west of Byron Bay (home to the Granite Belt wine region and of course, Symphony Hill Wines). At the helm is principal vinegar maker, Ian Henderson, who has studied and worked in the production of vinegar for over 15 years to develop a truly artisan range of vinegar. Made by hand, in collaboration with trained vinegar producers who are passionate about their craft, and aged in small oak barrels, it’s a sophisticated product that deserves to savoured and used with care. We use their Chardonnay White Balsamic vinegar, which is made with Chardonnay Vinegar and Chardonnay Grape juice for real fruit character. Sweet enough to use as a balsamic but not so sweet as to overpower the dish. No added colours or sulphites.
